How-To | V60 - Pour Over

The V60 has many different methods so it is difficult to narrow down the specifics for you. You’ll have to figure out what you like and apply that.

Here is a general overview of my preferences:
 
Grind size (Baratza Encore): 16-26 (Just below medium to medium coarse)
Weight: Grams of coffee x 16.694=ML of water
Amount of water: 200-400ml(I actually use grams. Grams simply includes the decimal but is the same)
Water temp: 195-205 degrees
 
One of the most basic methods as a baseline I found that was helpful to start is as follows:

  • Pre-wet your filter and warm your carafe.
  • Use water between 195-205 degrees
  • 20 grams of coffee x 16,694=333.8g of water (I drop the decimal)
  • Grind size 16
  • Place grounds in pre-wet filter and place on scale
  • 30 second pre-wet with 10% of your total water=35g of water
  • Pour for approximately 1.5-2 minutes in a circular pattern starting from the outside and working your way toward the middle. I’m not opposed to going back out to the walls toward the end of the pour.
  • Let drip for another 30-60 seconds, pull V-60 out and “swish” finished brew before pouring.

 
My new favorite method:
 
Kasuya 4:6 V60 method

  1. Pre-wet your filter and warm your carafe.
  2. Use water between 195-205 degrees
  3. Amount of grounds times 3:  25g of coffee x 3=75g of water per pour
  4. You will pour either 4 or 5 times totaling the 375g of water per the above formula on preference.
  5. Grind size 26 (I know crazy, right!?!?!)
  6. Place grounds in pre-wet filter and place on scale
  7. With the five pour method, each pour will last 45 seconds w/ the last pour being 30 seconds for a total of 3.5 minute brew time.
  8. Pull V-60 out after 3.5 minutes and “swish” coffee around before pouring
 
This method is really fun and easy to try out different variables. The first two pours, or 40%, impact the sweetness or acidity depending on how much water you use for them. The last three pours, or 60%, impact the body of the coffee.  So, if you want to bring out a little more sweetness try pouring 10g less water on your first pour and adding that to your second pour. If you want your body to be a little stronger then only do two pours instead of three. It would look like this from my above formula:
 

For more sweetness:
Pour 1-65g of water- 45 seconds
Pour 2-85g of water-45 seconds
Pour 3-75g of water-45 seconds
Pour 4-75g of water-45 seconds
Pour 5-75g of water-45 seconds
 
For stronger body:
Pour 1-75g of water- 45 seconds
Pour 2-75g of water-45 seconds
Pour 3-112.5g of water-60 seconds
Pour 4-112.5g of water-60 seconds

 
You can change the first pour in either direction to get more acidity(more water) or more sweetness(less water). You can also use the stronger body pour and change those amounts completely and change the first pour for sweetness/acidity. The fun begins with this baseline:
 
Pour 1-75g of water- 45 seconds
Pour 2-75g of water-45 seconds
Pour 3-75g of water-45 seconds
Pour 4-75g of water-45 seconds
Pour 5-75g of water-45 seconds
